I have pumpkin on the brain!
I’m beginning a pumpkin palooza. Be prepared to see all kinds of pumpkin recipes!
The other day I had a bite of pumpkin lasagna and thought I died and went to heaven. I’ll be searching for the perfect pumpkin lasagna over the next few weeks…
Until then… I’ll make some pumpkin blondies.
Warning: these are not the healthiest things I have ever made. I do believe, however, sometimes it’s good to just make a recipe without substitutes and thoroughly enjoy each bite!
Every now and then.
But these are hard to resist. Phew.
Pumpkin Blondies [adapted from The Girl Who Ate Everything]
- 2 C flour
- 1 T pumpkin pie spice
- 1 t baking soda
- pinch salt (~1/8 t)
- 1 C unsalted, room temperature butter
- 1 1/4 C brown sugar
- 1 egg
- 2 t vanilla
- 1 C pumpkin puree
- 1 C white chocolate chips
- 1 C butterscotch chips
Do this: preheat oven to 350 and spray a 9 x 13 pan.
Combine flour, pumpkin pie spice, baking soda and salt in a bowl and set aside.
Cream together butter and sugar and then add egg, vanilla, and pumpkin puree.
Mix well before adding dry ingredients.
Finally, stir in various chips.
Spread in pan (FYI the batter is thick!) and bake for about 40 minutes, or until toothpick comes out shiny and clean!
