a couple recipes from the past week

Pumpkin Ravioli [my original recipe]

what you will need

  • 1/2 C canned pumpkin
  • 1/4 C parmesan cheese
  • 1/4 C cooked spinach
  • 1 T nutritional yeast (optional)
  • dash salt
  • dash pepper
  • 12 wonton wrappers

Do this: preheat oven to 375. Mix all ingredients (besides the wonton wrappers) in a bowl. Spoon 1/2 T – 1 T into each wrapper, folding into triangles. Bake for about 10-12 minutes on a sprayed baking sheet.

I obviously don't love tomato sauce

Apple Oatmeal Cookies [my recipe]

10 apples for $.79 on sale... so many possibilities!

  • 1/4 C sugar
  • 1/2 C applesauce
  • 1/4 C egg whites
  • 2 C oats
  • 1 t baking powder
  • 1 t cinnamon
  • 1/2 t nutmeg
  • 1/4 t salt
  • 1 C chopped apples
Do this: preheat oven to 350. Combine ingredients and drop onto lined cookie sheet (FYI – the batter will look like it won’t hold together, but have no fear! It will! I was surprised too…). Bake for ~ 12-15 minutes.
