Blueberry Muffins.

Today, I started out with one of these goodies that I had made last night:

The best blueberry and oat lemon zest muffins. How’s that for a name??

I’ll just shoot straight and give you the recipe right away. These are the best muffins I’ve ever had. No joke…

Blueberry Lemon Oat Muffins [adapted from Joy the Baker)

  • 1/2 C Whole wheat flour
  • 1/8 C Flaxseed meal
  • 1/8 C Protein powder
  • 3/4 C Oats
  • 1/2 t Baking soda
  • 1/4 t Baking powder
  • dash Salt
  • dash Cinnamon
  • 1/2 C + 1 T Applesauce
  • 1 Large egg
  • 1/4 C Almond milk
  • 1/4 C Brown sugar
  • zest and juice from 1/2 a lemon
  • 3/4 C to 1 1/2 C blueberries (I used A LOT!)
Do this: preheat oven to 375. Combine dry ingredients (flour to cinnamon). In separate bowl, combine wet ingredients (from applesauce to lemon). Combine wet and dry ingredients and add blueberries. Zest the lemon into the bowl and add juice. Mix well. Bake for about 12 minutes.
